Sweet Potato Pie Recipe

Ingredients

For the Pie Crust:

  • 1 ½ cups all-purpose flour

  • ½ teaspoon salt

  • 1 tablespoon sugar

  • ½ cup cold unsalted butter, cut into cubes

  • 4-6 tablespoons ice water

For the Sweet Potato Filling:

  • 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)

  • ¾ cup brown sugar, packed

  • ½ teaspoon salt

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon ground nutmeg

  • ¼ teaspoon ground ginger

  • 1 teaspoon vanilla extract

  • ¾ cup evaporated milk

  • 2 large eggs

Instructions

Prepare the Pie Crust

  1. In a bowl, combine flour, salt, and sugar.

  2. Add the cold butter cubes and mix until the mixture resembles coarse crumbs.

  3. Gradually add ice water, one tablespoon at a time, mixing until a dough forms.

  4. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Filling

  1. Preheat your oven to 350°F (175°C).

  2. Boil or bake the sweet potatoes until tender. Peel and mash until smooth.

  3. In a large bowl, mix the mashed sweet potatoes, brown sugar, salt, cinnamon, nutmeg, ginger, and vanilla extract until well combined.

  4. Stir in the evaporated milk and eggs until the mixture is smooth and creamy.

Assemble and Bake the Pie

  1. Roll out the chilled dough on a floured surface to fit a 9-inch pie pan. Transfer the dough to the pan and trim any excess.

  2. Pour the sweet potato filling into the prepared crust and smooth the top.

  3. Bake in the preheated oven for 50-60 minutes, or until the center is set and a knife inserted comes out clean.

  4. Let the pie cool before serving.

Serving Suggestion

Serve the sweet potato pie chilled or at room temperature with a dollop of whipped cream on top. Enjoy!
